The Omi beef is aged at low temperatures to deepen its umami, then prepared by the head chef using his own distinctive techniques. The menu incorporates carefully chosen ingredients such as Heizo‑mai, a variety of Akita Komachi rice grown by contracted farmers in Akita Prefecture, sweet Shiga‑grown “Umatama” onions, Hokkaido maitake mushrooms, and Biwa trout, a fish native to Lake Biwa.
