About Omi Beef Specialty Restaurant Matsukiya Main Store
This flagship restaurant is directly operated by Matsukiya, a long‑established establishment whose roots trace back to Shozo Nishii—known as the “father of Omi beef,” who helped spread its name nationwide in the early Meiji era. With a discerning eye honed over generations as a butcher, the owner personally selects each cut of Omi beef, offering dishes that bring out its full character. Guests can experience the rich Omi beef culture passed down through history, along with the appeal of Shiga’s local ingredients.
The Omi beef is aged at low temperatures to deepen its umami, then prepared by the head chef using his own distinctive techniques. The menu incorporates carefully chosen ingredients such as Heizo‑mai, a variety of Akita Komachi rice grown by contracted farmers in Akita Prefecture, sweet Shiga‑grown “Umatama” onions, Hokkaido maitake mushrooms, and Biwa trout, a fish native to Lake Biwa. Steaks are accompanied by house‑made garlic chips made from domestic garlic and the restaurant’s signature jellied salt—a fine, airy salt that enhances the meat’s natural flavor.
The wine list features more than 300 selections curated by a senior sommelier, along with labels from Shiga’s wineries and sake breweries, allowing guests to enjoy refined pairings throughout the meal.
The restaurant offers a variety of spaces, including a lively steak counter where guests can watch the chef at work, serene table seating, and private rooms with distinct atmospheres. The interior blends Japanese and Western elements, creating an elegant setting for a relaxed dining experience.
