At the very origin of Japan’s Wagyu lineage lies THE ROOTS OF WAGYU®. Raised deep in Okinawa’s interior, these cattle almost never appear on the general market. We are the only restaurant on the main island permitted to serve them. Here, we nurture these exceptional animals—uncalved Tajima‑line females, raised for over 32 months—entirely on Okinawan soil.
