1. Udatsu Sushi (宇田津 鮨)
The concept is "sushi served within an art gallery," and each piece is devised by Chef Udatsu Hisashi, an alumnus of Tokyo's great sushi counters in Ginza and Nishiazabu. World renowned artists' works grace the walls of this Michelin selected (formerly one star) sushi restaurant hidden just off the main street in Nakameguro. Among chef Udatsu's signature dishes, two plant-forward morsels stand out even in the standard menu. The herb roll was inspired by the chef's trip to Hiroshima, and the veggie roll features a selection of fresh produce turned into charming sushi. The chef was raised in Tokyo and grew up with the scent of vinegared rice from a nearby sushi restaurant. Chef Udatsu still uses rice grown in Kunitachi, his hometown, to make his sushi rice. His courses are both creative and thoughtful, carrying forward tradition while innovating in his own style. The restaurant is excellent for groups and features two floors, including multiple counters and private rooms. Dedicated vegitarian courses are available with at least 2 days notice, but be sure to mention whether dashi is acceptable at the time of reservation.

2. Sushi Kanesaka (鮨 かねさか)
Sushi Kanesaka, a Michelin 2-star restaurant that has been named among Tokyo's top 100 sushi restaurants multiple times, also serves a vegan course for guests. Chef Kanesaka Shinji received the Michelin mentor chef award in 2025, a recognition of his role in forming Tokyo's sushi culture over the past two and a half decades. The flagship in Ginza is now supported by branches throughout Tokyo and further afield. The legacy of Kanesaka extends far back, starting with the crest that signifies its clan, one used since the warring states period. Sushi Kanesaka, a traditionalist and pillar of edomae sushi, takes pride in its careful balance between each element. 3. Ginza Umi (銀座海味)
Welcoming guests with a shout of "irrashaimase," Ginza Umi is a place of warmth and tradition. Longtime diners rave not only about its expertly selected sushi -- hand chosen each morning at Toyosu market and paired with cuts from trusted fishermen around the country -- but also the otsumami small plates. Under Chef Nagano, a legend of the sushi world, Sushi Umi received two Michelin stars from 2015 to 2019. The new master, Chef Shimamoto, came into his own in recent years,driven by his commitment to carrying on the legacy of Sushi Umi. Aside from carefully blended soy sauces and vinegar, Ginza Umi is known for its use of excellent produce, including vegetables that are grown organically in season, instead of green-house raised selections. 4. Fujisushi (富士鮨)
A 2025 and 2026 Michelin Guide selection, Fujisushi takes its name from Japan's most prominent mountain for a reason. With the dream of being well known overseas as well as in Japan, Fujisushi pursues a style that is both contemporary and tied to the roots of the craft, when it was fast food for the everyman. For a price that can be covered by a single banknote, diners at Fujisushi can enjoy a selection of small plates followed by sushi until they call, "stop!" Although an omakase option is available, guests can also just order the sushi they like, making it easy for vegan diners to request only their favorites. 5. Ichibancho Teruya (一番町てる也)
The chef of Ichibancho Teruya follows one of the representative schools of modern sushi, interspersing nigiri with morsels of otsumami. The shari is prepared with red and white vinegar, and he is also particular about the nori used in his restaurant. Another notable feature of Ichibancho Teruya is Chef Teruya Iida's excellent command of English, thanks to spending his high school days and early career in New York. He first learned to craft sushi in New York before returning to Japan, where he worked at Sushi Sho Saitou. Well-versed in the expectations of both local Japanese guests and foreign visitors, his omakase course is also available for vegan diners, as long as you mention it at the time of reservation. 7. Sushi "Sakura" / Hilton Tokyo Odaiba (寿司「さくら」/ヒルトン東京お台場 )
Like Nadaman, Sushi "Sakura" is actually just one part of the sprawling Sakura restaurant in Hilton Tokyo Odaiba. The space looks out over Tokyo bay. Wrap-around windows offer views of the Rainbow bridge and greenery surrounding the hotel. The sushi counter has just ten seats. A pristine display case contains the day's freshest seafood, all presented directly in front of visitors. Guests can relax while watching the chefs carefully form each piece of nigiri. Sakura sushi provides special holiday courses and monthly specials in addition to its usual offerings, which even includes a choose-your-own option, for guests who prefer to take control of their meal rather than opting for omakase.
