Guests are free to choose their arrival time at their convenience.
Your meal begins with a six‑course omakase, a concentrated expression of the day’s finest seasonal ingredients.
From that point on, the experience is shaped entirely by your preferences.
Order as many pieces as you like from the menu—guided simply by what speaks to you in the moment.
Enjoy each bite at your own pace, without concern for the timing of those around you.
Paired with carefully selected sake and Burgundy wines,
you are invited to savor sushi crafted with exceptional ingredients and meticulous technique—
a quiet, unhurried moment of indulgence prepared just for you.
------------------------------------------------------
Away from the hustle and bustle of Tokyo, quietly step through the noren curtain to find yourself in a world dedicated to authentic Edomae sushi, embodying the philosophy of “returning to the origins.”
At this Michelin-selected restaurant, the essence of sushi lies in enjoying your preferred nigiri at your own pace, creating a relaxed and effortless flow.
Even the shari (sushi rice) is crafted with an almost reverent care. Brown rice is milled in-house daily, with the polishing ratio adjusted to match the grain’s unique moisture, texture, and stickiness. The refreshing acidity of the shari pairs effortlessly with the rich, luscious flavors of medium-fatty tuna, while remaining equally harmonious with the delicate, refined taste of white fish.
Fresh seafood is delivered daily from notable regions across Japan, including Toyosu, Fukuoka, Osaka, Niigata, and Rausu. Every ingredient undergoes flash-freezing at ultra-low temperatures to preserve its flavor and moisture, while also ensuring safety by eliminating concerns like anisakis. The result is sushi that blends trust and clarity with every single piece.
The reservation process is refreshingly flexible, allowing guests to arrive at a time that suits them best. Once seated, the course begins naturally with six seasonal appetizers, gradually transitioning into nigiri prepared to highlight the flavors of the season.
You can set your own pace, stopping when you feel content. Even the size of the rice and thickness of the toppings are tailored to your preferences at that very moment.
In addition to its thoughtfully curated sake selection, the restaurant offers an exceptional lineup of Burgundy wines, and it also welcomes guests to bring their own bottle for special occasions or casual visits alike. Whether it’s a milestone celebration or a quiet evening over a single piece of sushi, the hospitality remains warm and attentive.
At the wooden counter, you can enjoy the best seat in the house—an intimate view of the chef’s expert craftsmanship. Each piece of sushi is an elegant expression of the season, creating a luxurious experience that engages all five senses.
Named after Japan’s iconic mountain, the restaurant has gained admiration from guests worldwide, all while remaining true to its roots. With a philosophy rooted in sincerity and tradition, it continues to quietly reflect on what sushi truly means.
