Even the shari (sushi rice) is crafted with an almost reverent care. Brown rice is milled in-house daily, with the polishing ratio adjusted to match the grain’s unique moisture, texture, and stickiness. The refreshing acidity of the shari pairs effortlessly with the rich, luscious flavors of medium-fatty tuna, while remaining equally harmonious with the delicate, refined taste of white fish.
Fresh seafood is delivered daily from notable regions across Japan, including Toyosu, Fukuoka, Osaka, Niigata, and Rausu. Every ingredient undergoes flash-freezing at ultra-low temperatures to preserve its flavor and moisture, while also ensuring safety by eliminating concerns like anisakis. The result is sushi that blends trust and clarity with every single piece.
The reservation process is refreshingly flexible, allowing guests to arrive at a time that suits them best. Once seated, the course begins naturally with six seasonal appetizers, gradually transitioning into nigiri prepared to highlight the flavors of the season.
You can set your own pace, stopping when you feel content. Even the size of the rice and thickness of the toppings are tailored to your preferences at that very moment.
