A highly recommended dish is the “low-temperature cooked liver,” where the liver’s flavor is intensely concentrated in a vacuum state. Slowly cooked at a low temperature, it is a delicacy with a moist and tender texture like foie gras.
The owner’s pride, a counter made of a single plank of Yoshino hinoki (Japanese cypress), has a striking presence. The shelves with the aroma of wood display carefully selected tableware.
