About Toraya Kochuan
Toraya Kochuan is a Japanese restaurant nestled in the nature-rich village of Sanagouchi, along the banks of the Sonose River, part of the Yoshino River system. Passing through the gate, a garden reflecting the surrounding mountain scenery unfolds before you, inviting you into a serene “world within a jar,” far removed from the everyday. As the seasons shift, time flows quietly, allowing you to contemplate each dish in tranquility.
Owner Koji Iwamoto, the third-generation proprietor of the long‑established Toraya Ryokan, trained at the prestigious Kyoto Kitcho Arashiyama Main Restaurant before returning home in 1985 to open Toraya Kochuan. Since then, he has pursued a style of cuisine deeply rooted in the terroir of Tokushima.
His cooking is remarkably simple, guided by the belief that “true quality lies hidden in the unassuming.” With dashi at its core, each ingredient’s natural character is carefully drawn out and elevated into a dish of quiet depth. Spring brings bamboo shoots, summer offers sweetfish and eel, autumn features mushrooms, and winter highlights game—seasonal blessings served at their peak. The restaurant’s signature sweetfish is sourced with exceptional dedication, even requiring trips to the Yasuda River in Kochi. Rice and vegetables are primarily local, and the region’s pristine water further enhances the flavor of the dashi.
The sake selection focuses on umami-driven labels, including Odenden, brewed from pesticide‑free rice grown in local terraced fields and pure, carefully selected water. Harmony between the sake and the cuisine is always paramount.
Here, surrounded by the natural abundance of Tokushima—its mountains, rivers, and sea—you can savor flavors that are simple yet profound. It is a place where you can share the joy of food with someone special and spend a truly memorable moment together.
