About Reminiscence
Two Michelin stars in Nagoya, the modern French restaurant “Reminiscence” with the theme of “afterglow and memory.”
Owner-chef Masaki Kuzuhara trained under top chefs in both the East and West of Japan, including Shuzo Kishida of the three-star “Quintessence” and Hajime Yoneda of the three-star “HAJIME.”
In 2015, on his 30th birthday, he opened “Reminiscence” in Sakae, Nagoya. The restaurant quickly gained popularity, earning two stars in the Michelin Guide and 3 toques in the Gault & Millau. In 2023, it moved to its current location.
His specialty is eel cuisine, which he learned from the long-established restaurant “Atsuta Horaiken.” Using world-class ingredients from the Tokai region as the main component, the chef employs delicate techniques, such as a heat control system that determines the temperature down to 0.1 degrees Celsius, to draw out the maximum potential of the ingredients.
He continues to explore his own French culinary world, which condenses the culinary philosophy and techniques he learned from two chefs with different personalities, even incorporating a storyline.
