Chef Takuhei Yamada, trained at the renowned yakitori restaurant Torishiki, presents an omakase centered on traditional yakitori techniques, using the focused heat of binchotan charcoal and wood fire. While honoring the classic foundations of yakitori, he weaves seasonal ingredients and Japanese herbs throughout the course to create a refined and expressive dining experience.
The menu extends beyond yakitori alone, incorporating ingredients such as eel, soft‑shelled turtle, and game meats—crafting an omakase that transcends the conventional boundaries of the genre. Rooted in yakitori yet enriched with seasonal ingredients sourced from across Japan, the experience reflects a vision of Japanese cuisine found beyond the pursuit of perfect skewers.
