About Yakitori Hirano
We offer a course menu designed to bring out the full potential of carefully selected premium chicken breeds—centered on Kai Shingen-dori from Yamanashi, complemented by Oshu Nanbu-dori from Iwate and Kuroiwa Jidori from Miyazaki—so that guests can savor the natural flavor and quality of each bird.
Guided by the philosophy of serving chicken “at its most delicious state,” we source birds raised on exclusive farms at the foot of the Southern Alps and Mt. Fuji. They are transported from Yamanashi in just about an hour and a half, ensuring that freshly processed, same-day chicken is used for the day’s menu—delivering pure, juicy freshness with no off-flavors.
For grilling, we use Kishu Binchōtan charcoal (made from Ubame oak), renowned for its world-class heat power and longevity. The intense infrared radiation and moisture-retaining properties of Binchōtan sear the surface crisp while locking in flavor and tenderness within.
Adding further depth to our yakitori is a secret sauce that has been passed down for over half a century. Made simply from select soy sauce, mirin, and sugar, the sauce is naturally fermented and aged without filtration or heat treatment, resulting in a rich aroma, mellow sweetness, and deep umami.
Our grill chefs value communication with every guest, infusing each skewer with sincerity and care to create a truly heartfelt dining experience.
