Savor the Finest Edo-style Sushi in Ginza.
Located just a few minutes’ walk from Ginza Station, our establishment awaits at the bottom of the stairs in a nearby building.
We believe that “the shari (sushi rice) is the soul of sushi.”
Observing the condition of the rice, which varies with the seasons, we use a specially ordered thick kettle to cook the rice, considering the optimal amount of water and heat. We create sushi rice using carefully crafted blend of vinegar that has been aged, and the preparation of both the dishes and ingredients is perfected through continuous research and dedication.
With the theme of aging, we age our ingredients to enhance their flavor and texture. Our job is to maximize the potential of seasonal, fresh ingredients.
As we work with living ingredients, we approach each one with gratitude during the preparation process.
