Located in Marutamachi, Kyoto, Hachikian Marutamachi Honten is a long‑established chicken specialty restaurant founded in 1970. Set within a traditional Kyoto townhouse with more than 126 years of history, it offers authentic poultry cuisine in an atmosphere steeped in the charm of the ancient capital. Since its opening, it has continued to be cherished by food connoisseurs and notable figures alike.
At Hachikian, the head chef personally selects premium chicken and duck, which are then aged using the restaurant’s unique techniques rather than cooked immediately. This process draws out their deepest flavors. The signature mizutaki hot pot features generously cut pieces of chicken, allowing diners to savor the burst of rich juices and springy texture with every bite. For kamo (duck) sukiyaki and kamo nanban, thigh meat—not loin—is used, offering a luxurious depth of flavor from its high‑quality fat.
Supporting these dishes are a deeply flavorful yet gentle house‑made broth and a special ponzu sauce aged for several months. Kyoto ingredients such as Kujo leeks and Kyoto sansho pepper add further layers of complexity. Nambu ironware pots are used in the cooking process to bring out the full character of each ingredient.
