The heart of the restaurant lies in its soba, made from indigenous buckwheat varieties sourced from regions across Japan and served in two styles: seiro and coarsely ground. These noodles showcase the true depth, aroma, and character of buckwheat, along with the smooth, satisfying nodogoshi—the distinctive swallow and texture that define exceptional soba. The beautifully arranged Eight‑Item Appetizer Platter and the seasonal Japanese course dishes—each crafted with delicate attention to the ingredients—are also highly regarded.
