Inheriting the distinguished lineage of the highly acclaimed Udatsu Sushi, HISASHI SUSHI is a new restaurant where young, highly trained chefs bring their craft to life. It offers an exceptional setting for adults to enjoy authentic sushi à la carte, at their own pace.
A highlight of the experience is each beautifully crafted piece of sushi, made with meticulously selected ingredients. The shari (sushi rice) is prepared with organic rice from Kumamoto, grown with naturally filtered water from the Aso region, and seasoned with Kyoto’s Iio Jozo vinegar, agave powder, and Mataichi salt, giving it a delicate texture that gently melts on the palate. Mitsuru soy sauce from Itoshima and the restaurant’s house‑made salt—slowly cooked from fresh seawater delivered directly by fishermen—further elevate the natural umami of the fish.
The interior features a striking main counter made from Aso lava stone and a U‑shaped counter of fragrant Kiso hinoki (Japanese cypress), creating a space where natural wood knots and textures are treated as art. Guests can enjoy curated selections of sake and wine in this refined yet relaxed atmosphere. Whether for meaningful conversation with someone special or for savoring exceptional quality without formality, HISASHI SUSHI promises a deeply satisfying and memorable dining experience.
