The sixth‑generation owner has inherited the tradition and meticulously grills each eel with refined craftsmanship.

Their secret sauce—continuously replenished since the restaurant’s founding—is paired with classic Edomae techniques: cutting, skewering, initial grilling, steaming, and final grilling. The steaming process creates a soft, delicate texture that harmonizes beautifully with the aromatic binchotan charcoal.
