Rooted in the traditional practice of shojin ryori—Buddhist cuisine prepared without animal products—this seasonal menu embraces contemporary dietary sensibilities by thoughtfully incorporating the aromatic qualities of the gokun (five pungent vegetables), such as green onions and garlic, which are traditionally avoided in classical shojin cooking.
The course features goma dofu (sesame tofu) along with eight small dishes showcasing seasonal vegetables prepared with diverse techniques and presentations. Guests can also enjoy specialties such as unpen (a delicate cloud‑shaped wheat gluten dish) and a refined plant‑based interpretation of grilled eel (unagi‑modoki). The meal concludes with seasonal Japanese sweets and tea.
