About Imoto
Nestled quietly in the serene residential area of Yakuin, Fukuoka, Imoto is a two-Michelin-starred restaurant where you can savor delicate and refined Kyoto-style cuisine crafted by the young chef, Tatsuya Imoto.
Born in 1986, Chef Imoto graduated from a local culinary school in Fukuoka and then spent seven years training at a Japanese restaurant in Kyoto. He opened Imoto in 2015 at the age of 29, and just five years later, achieved the feat of earning two stars in the world-renowned gourmet guide.
The most important element in Chef Imoto's cooking is the exquisite dashi broth, carefully extracted from Rishiri kelp. Using natural spring water from Aso and having dried bonito and tuna flakes (katsuobushi and magurobushi) without steaming, he pursues a fragrant and deep flavor.
Ingredients are carefully selected through trusted relationships cultivated since his time in Kyoto, as well as by relying on the keen eye of local Fukuoka purveyors. The cuisine, which makes abundant use of seasonal seafood and vegetables to maximize their natural flavors, offers a truly blissful experience.
Chef Imoto's aesthetic sense shines through in the tableware, which includes Wajima lacquerware bowls and Kiyomizu ceramics. A highlight of the experience is the thoughtful pairing of seasonal dishes with sake from across Japan and Burgundy wine.
The interior features a L-shaped counter made of warm wood, providing every guest with a prime view of Chef Imoto's skilled techniques.
