Dedicated to excellence, AKAMIYA COWSI partners with trusted local producers, utilizing female Wagyu cattle from Kyushu, crossbreeds with robust lean meat derived from Wagyu and dairy cattle, and aged cows that have borne calves multiple times. Each cut undergoes precise aging methods tailored to enhance its natural quality.
The bone-in cuts, aged between 30 and 120 days, are masterfully transformed. Through the aging process, excess moisture is removed, concentrating the umami flavor up to five times more than standard meat. With amino acids doubling or even tripling, traditionally firm red meat becomes extraordinarily tender with a depth of flavor that is unparalleled.
Beyond the signature bone-in aged cuts, the menu showcases premium red meat from Kyushu, including Iki beef, Saga beef, Miyazaki beef, and Bungo beef.
