Tucked away quietly behind the popular Karasuma restaurant Ji-zakana Shokudō Tainotai Karasuma, this intimate Japanese restaurant offers just eight counter seats.
Opening the door reveals a dignified counter carved from a single slab of hinoki cypress, softly glowing and setting the tone for a refined, tranquil atmosphere.
Owner‑chef Furukawa, who trained at Kyoto’s renowned Sangencha, presents Japanese cuisine that minimizes the use of seasonings to draw out the pure, inherent flavors of each ingredient. The dashi is made with spring water from the Shirakami‑Sanchi Mountains, a UNESCO World Natural Heritage site, resulting in a gentle, pristine broth free of any harshness. Rice is purchased as brown rice and polished only in the amount needed each day, creating dishes with a clear aroma and remarkable purity.
The menu features seasonal expressions of Japanese culture: hassun platters reflecting traditional festivals and the turning of the seasons, fragrant charcoal‑grilled pike conger (hamo), and freshly prepared warabi mochi. A specially designed counter, aligned in height with the kitchen, allows guests to watch each dish come to life before their eyes, enhancing the sense of immersion.
Tableware is thoughtfully selected to complement both the season and the cuisine, including pieces of Karatsu and Hagi ware. Enjoy a serene and beautiful moment where cuisine and ceramics resonate in harmony.

As all guests begin at the same time, please be seated at least five minutes before the start. Please note that if you arrive late, we may not be able to serve your meal.
If you do not contact us and exceed your reservation time, it will be automatically canceled.
