
Kitashinchi Okurano

He was born in Ishikawa Prefecture and trained in the Kansai region.
The light flavor with kombu dashi (kelp broth), made with many ingredients from the Hokuriku region, reflects chef Manabu Nakamura’s upbringing.
Abalones from Noto, oysters from Senrihama, and Kanokani crab from Kanaiwa are the seasonal delicacies.
The seafood from the Sea of Japan is combined with salt from Suzu, and the rice is local Koshihikari rice from Tsubata Town.
Wajima lacquerware, Kutani ware, and a Kanazawa atmosphere abound.
The name of the restaurant, “Higashi Chaya,” evokes a sense of nostalgia.

From November to February, Kanokani crab will be served at the restaurant. We are very sorry, but we ask those who are allergic to crab to refrain from making reservations. Please be sure to inform any accompanying guests.
