We enjoyed watching him focus on his work throughout the evening and many bottles of sake later our bellies were full of delicious sushi and our hearts were joyous at having witnessed his art.

Chef Yuya Nishimura began his culinary journey at the long-established Fukukizushi, later refining his skills at Sushi Mizuki inside The Ritz-Carlton, Kyoto, before opening Sushi Yuden. Each day, he visits the famed Kuromon Market to personally select the freshest ingredients available. His tuna is sourced directly from a trusted Toyosu wholesaler, with whom he has maintained a relationship since his training days.

They explained what we were eating, and they answered any question we had about the food. The food was absolutely delicious - fried food on a stick, what could go wrong lol? It was more than that, though - the ingredients were so fresh, the combinations of flavors were divine, and the food just kept coming. The food, paired with a nice ice-cold draft beer made for an amazing evening. I cannot recommend this restaurant enough.

Zeyad5.0Posted on :10/09/2024The food at Kushiage 010 is exceptional and the variety of flavors really complement each other. From the eel burger with Gorgonzola to the wagyu chateaubriand. Everything was on point! The staff are also very friendly.
I highly recommend visiting.

Located near Kitashinchi Station, AKA to SHIRO is a stylish sushi restaurant that has consistently been awarded a Bib Gourmand in the Kyoto–Osaka Michelin Guide.
True to its name—which means "Red and White"—the restaurant offers sushi crafted with two distinct types of vinegared rice: “Aka” (red) rice seasoned with red vinegar in the Edo-style tradition, and “Shiro” (white) rice prepared with lighter, Kansai-style rice vinegar. The sushi toppings are sourced fresh from Ehime and paired with the rice that best complements their flavor—red vinegar rice for oily fish, and white vinegar rice for delicate white fish.

The balance between the rice and the topping was good, and the toppings were not just plain but had a nice touch, which was wonderful. -

The chef crafted an exquisite meal, with a generous selection of sushi that left me completely satisfied. Each piece featured a thoughtful combination of fish with unique textures and flavours, showcasing the chef’s meticulous attention to detail.
The sushi chef’s interaction with customers added a personal touch to the experience, making it both engaging and enjoyable. Watching the precise preparation of the sushi was a fascinating show in itself, highlighting the skill and artistry behind each piece.
