
About Ramunosuke
We source whole, precious domestic sheep and butcher them with meticulous care. Trimmings are minced and used for fried dishes, while the bones are simmered to create a rich broth. “Because we are entrusted with a life, we use every part without waste.” We believe this is the greatest respect we can show to both the producers and the sheep.
In Japan, the number of sheep farmers and ranches is small, leading to low breeding rates, challenging environments, and a food culture in which lamb has yet to fully take root. Even under such circumstances, there are dedicated livestock farmers who pursue exceptional quality and raise their sheep with deep care. Ramunosuke was founded to honor their passion. We serve domestic lamb—accounting for less than 1% of Japan’s total consumption—along with select imported lamb, supplied exclusively to our restaurant in Nagoya. By understanding the unique qualities of each breed and cut, we craft dishes that represent what we consider the very best.
Our glass-walled, custom-made wine cellar houses around 100 types of wine, including champagnes, white wines, and red wines, with a focus on France and California. The selection changes with the seasons, and each bottle is chosen by the owner to complement our lamb dishes.
The 12-seat counter, softly illuminated by downlights, features warm wood tones and a tranquil, smoke-free atmosphere—ideal for business dinners, meetings, and dates. Private bookings are available for groups of ten or more. A bonsai tree visible from every seat creates a striking seasonal backdrop, from spring cherry blossoms to autumn foliage. Every detail of the space has been carefully considered, from the custom-made chairs crafted in Hida Takayama to the hand-finished mortar walls and floors.
