Otoubashi Sumiya offers authentic kappo and kaiseki cuisine that captures the subtle transitions of Japan’s four seasons. Guided by our commitment to preserving true Japanese culinary tradition, every dish is crafted with uncompromising care—from the selection of ingredients to the final presentation.
Our cuisine is prepared by a veteran chef with 34 years of experience, whose philosophy centers on understanding each ingredient deeply and bringing out its natural character. Hot dishes are served at their best—hot—and every step of preparation is carried out with meticulous attention. These faithful “basics” create the delicate, layered flavors that define our cuisine.
We source primarily wild-caught seafood and carefully selected vegetables, including produce from Aichi Prefecture and organic farms. Seasonal delicacies such as soft-shelled turtle, conger eel, pufferfish, sweetfish, and crab are featured in our course menus, allowing guests to savor the unique flavors of each season.
Our signature soft-shelled turtle dishes use open-range turtles from Nagasaki Prefecture, raised in an environment close to nature. Their refined sweetness and deep umami are brought out through expert preparation, resulting in a clean, elegant flavor free of any unwanted aroma.
We also take great pride in our sake selection. Our dedicated sake cellar maintains large bottles at optimal temperatures, preserving their delicate aroma and flavor. With around 20 carefully curated varieties available at all times, we can recommend pairings that complement each dish. Shochu, beer, and other beverages are also offered.
The interior embraces the quiet beauty of Japanese aesthetics. The minimalist design, free of unnecessary ornamentation, creates a serene atmosphere where dignity and warmth coexist, allowing guests to relax and enjoy the gentle flow of time.
