Sushi Imagine opened its doors on January 11, 2025, in a historic Kyoto townhouse in Kawaramachi. The warmth of Meiji-era architecture, together with the tranquil garden view from each seat, creates an extraordinary atmosphere that feels beyond the everyday.

The restaurant’s name, Sushi Imagine (今尽), reflects the chef’s resolve to “devote himself fully to the present.” From appetizers to nigiri, he personally prepares every element of the sushi experience, pouring his passion into each step.

The rice, defined by the character of red vinegar, asserts its presence against the boldly sliced toppings. This balance highlights the natural depth and flavor of the fish, resulting in a distinctive expression of Edomae sushi.
