Fresh seafood, sourced from Kyoto’s local markets, Tokyo’s Toyosu Market, and Hokkaido, allows guests to savor both traditional Edomae-style sushi and seasonal specialties such as Hokkaido sea urchin and hairy crab.
Each ingredient is meticulously prepared to highlight its unique qualities, employing precise cutting techniques, delicate kombu (kelp) wrapping, and refined methods like instant boiling to enhance flavors. Sushi rice, freshly prepared for each session with a special blend of red vinegar, distinguishes Sushi Ginza Onodera’s creations from others.
Chef Takuya Kubo, originally from Aomori Prefecture, brings unparalleled expertise to the Kyoto location. With an impressive track record of maintaining Michelin stars for four consecutive years at "Sushi Ginza Onodera New York," Chef Kubo ensures a dining experience of exceptional quality and artistry.
The restaurant’s interior celebrates traditional Japanese craftsmanship. Guests dine at an 8-meter counter crafted from a single piece of Hinoki (Japanese cypress). For families or small groups of up to six, one of the two private dining rooms offers a warm, sunlit ambiance. Meals are served on elegant "Bizen ware" from Okayama, alongside Kiyomizu and Kyo-yaki pottery from Kyoto.
