Owner and chef Mr. Nagaoka carefully selects the finest ingredients from Hagi in Yamaguchi Prefecture and Kyushu, curating an omakase menu featuring ten delicately prepared dishes. Each dish reflects his dedication to bringing out the natural flavors of the ingredients, offering a fresh perspective on Japanese cuisine.
The interior is a testament to refined atmosphere, with carefully chosen wood and stone elements enhancing its sophisticated ambiance. The L-shaped ginkgo counter and private dining rooms provide a calm, intimate setting, making the restaurant ideal for business meetings and celebrations. With English-speaking staff available, the restaurant warmly welcomes guests from around the world to experience Japanese aesthetics and hospitality at their finest.
The sole offering is the omakase course, beginning with a comforting bowl of warm porridge and progressing through exquisite seasonal dishes—such as soups, simmered vegetables and fish, and homemade karasumi (salted mullet roe). The finale of the meal is the freshly cooked earthenware pot rice, lovingly prepared for each table and accompanied by a selection of eight flavorful sides, including homemade mentaiko (spicy cod roe), meat miso, dashimaki tamago (rolled omelet), pickles, and wild yam.
The beverage menu features around 15 carefully curated varieties of sake, predominantly light and dry, perfectly matched to the seasonal flavors of the cuisine.
