Crafted by a chef who honed his skills for four years at a Michelin-starred restaurant in Southern France, this French cuisine journey features fresh fish sourced from Nagasaki and Hirado Market as its centerpiece, woven together with seafood and vegetables.
A standout dish is the signature "Soup de Poisson," which delivers a complex blend of flavors by highlighting the natural umami flavor of fish and vegetables without relying on crustaceans. Each dish showcases the freshness and delicate flavors of the ingredients, offering a refined dining experience that is both light and healthy, leaving a lingering, vibrant aftertaste.
To complement the seafood appetizers, we select white wines with bright acidity and fruit-forward notes from around the world. For soups and main courses, our pairing options include elegant rosés and light-bodied red wines, thoughtfully chosen to enhance and elevate the essence of each dish.
