About Sensui
“Sensui” is a hideaway in a back alley near Yakuin Station that attracts Fukuoka's gourmets. Here, fresh seafood from the Genkainada Sea, Buzen, Karatsu, and other nearby waters, as well as local vegetables mainly from Kyushu, are used in abundance to bring out the best of seasonal nourishment in Japanese cuisine. The menu consists only of omakase courses. The menu is only for omakase courses, allowing diners to enjoy “Sensui's unique Japanese cuisine” that makes the most of the original flavors of the ingredients while incorporating the owner's sensibility.
The sake served at Senzui is carefully selected by the owner, including famous sake brewed by famous breweries in western Japan. The sake served to be carefully matched with the food to further deepen the aftertaste of the meal. Here, you can enjoy a supreme moment as you savor a dish that reflects the changing of the seasons.
Born in Fukuoka Prefecture, Owner Matsuo began his culinary career at the age of 20, honing his skill at a French restaurant in Kumamoto before embarking on a journey that took him to France and other European countries. He was able to rediscover the splendor of Japanese culture in foreign lands, and returned to Japan with the desire to “inherit and transmit Japanese cuisine as a Japanese person. After training in Japanese cuisine, he opened “Sensui” at the age of 33. Since then, he has continued to pursue “Japanese cuisine unique to Fukuoka” in Fukuoka.
The restaurant's quintessential “sashimi” is a fusion of the freshness of the fish being processed in front of you and the skill of the chef. Matsuo's style is to serve the fish at its most delicious moment, without adding any extra touches to the ingredients. His discerning eye and skillful handiwork give each dish an exquisite taste.
The interior of the restaurant is a sophisticated Japanese space with persimmon tannin fixtures and a white wood counter. Furnishings from western Japan, such as Shodai-yaki pottery fired with coarse clay from Arao, Kumamoto, and Tsuboya-yaki pottery from Okinawa, which features powerful paintings, create an exquisite harmony with the restaurant's cuisine.
