Under the concept of “The Finest Gastronomy from Osaka,” Wajo offers innovative and one-of-a-kind teppanyaki cuisine, supervised by Chef Ryuta Iizuka, owner of the two-Michelin-starred restaurant Ryuzu. Having long stood at the forefront of French cuisine, Chef Iizuka blends classical techniques with a free-spirited approach to Japanese ingredients—now reimagined through the expressive medium of teppanyaki.
At the heart of our culinary philosophy lies the rich bounty of the Kansai region. From the pristine seafood of the Seto Inland Sea and seasonal vegetables from Kyoto to top-grade Japanese beef such as Kobe and Matsusaka, every ingredient is carefully selected by the chef himself, who personally visits producers to ensure quality and integrity. Through direct dialogue, he gains a deep understanding of the passion and dedication behind each product, allowing us to unlock each ingredient’s full potential.
