About Ippongi Ishibashi
Ippongi Ishibashi, nestled in a quiet residential area of Fukuoka City, is a hidden gem where guests can savor sushi and Japanese cuisine crafted by a master chef who honed his skills in an unpretentious and welcoming setting. The owner, Mr. Ishibashi, has honed his expertise in Kyoto kappo, Edo-mae sushi, and kaiseki cuisine at prestigious establishments. His dishes, created with meticulously selected ingredients, captivate even the most discerning gourmets in Hakata, renowned as a treasure trove of gastronomy.
The restaurant's charm extends beyond its exquisite cuisine. Many customers leave saying, “I had a wonderful time,” owing to the serene atmosphere, the owner’s warm and engaging personality, and the harmonious interaction between the owner and his young team. Combined with exceptional food, these elements ensure an unforgettable dining experience.
Born in Fukuoka in 1985, Mr. Ishibashi grew up inspired by his father’s dedication to the culinary arts and pursued his dream of becoming a chef. His training at renowned venues such as “Kodaiji Wakuden” (Kyoto kappo), “Umi” (Edo-mae sushi), and “Kaiseki Kamimura” (a distinguished Ise kaiseki restaurant) was notoriously rigorous. However, these formative years laid the foundation for “Ippongi Ishibashi,” which he opened in 2018. Here, he welcomes guests with his natural cheerfulness, creating an inviting space where Japanese cuisine and sushi can be enjoyed casually.
The meticulously designed course begins with an appetizer, followed by a soup bowl, regarded as the “heart of the meal,” sashimi, sushi, a grilled dish, and a seasonal creation. Mr. Ishibashi’s deep knowledge of regional ingredients—celebrating Kyushu's unparalleled freshness, Kyoto's culinary heritage, and Tokyo's abundance—shines through every dish, reflecting the skills he refined during his training.
Housed in a traditional sukiya-style residence, the restaurant may initially seem formal, but its warm, inviting atmosphere dispels any apprehensions. The six-seat counter is filled with laughter and camaraderie, offering diners a front-row view of the chef’s craftsmanship in a relaxing setting. On the second floor, private rooms provide a tranquil setting for special occasions, making the restaurant ideal for celebrations and intimate gatherings alike.
