Nestled in the tranquil streets near Ohori Park Station and Otemon, Sushiryori Ichitaka is a distinguished establishment led by master chef Kazuhiro Kimiya.
As a revolutionary figure in the sushi industry, Chef Kimiya has introduced groundbreaking techniques, such as aged sushi and shinkeijime (nerve tightening), to elevate flavor and texture. Using only the finest seafood sourced from across Kyushu, Chef Kimiya pairs his artistry with sushi rice cooked in a unique broth, crafting an original style of sushi. Each piece is meticulously crafted and carefully "blended" by hand right before serving.
The restaurant’s interior exudes understated elegance, featuring a serene atmosphere and a beautifully grained wooden counter that sets the stage for an exceptional dining experience. Karatsu wares and Nabeshima wares are thoughtfully selected to complement and enhance the presentation of each dish.
Guests are invited to enjoy seasonal delicacies like seared cutlassfish nigiri and red vinegar-marinated lean tuna. To further enrich the experience, the restaurant offers expertly paired selections of Japanese sake and premium wines, each chosen to harmonize with the flavors of the dishes.
