About AKA to SHIRO
"Aka to Shiro" uses two different types of vinegared rice according to the species: red for tuna and blue fish, and white for shrimp and white fish.
Red vinegar is the Kanto style, associated with Edo-mae sushi. Rice vinegar and sugar are used in the Kansai style, which is rooted in oshizushi.
The red and white mixed baton relay between the East and West cultures is a way of capturing the heart.
We hope you will enjoy our authentic sushi, which uses two different colors of rice and is a delight to your senses, with a wide selection of Japanese sake.
