The name of the restaurant, "Hortensia," comes from the hydrangea flower "Hortensia" in the Brittany region. The name reflects the desire to approach cooking with versatility, just like the hydrangea that changes its color depending on the soil conditions.

To create each dish, for example, they use around 7 to 8 different types of vegetables at any given time.
