Yakitori Torisen is devoted to honoring the life of each chicken through a complete yakitori experience, putting our heart and soul into every bird. We serve Matsukaze Jidori, Japan’s rarest and only purebred japanese jidori, raised in Tamba-Sasayama, Hyogo Prefecture. From raising the Matsukaze Jidori ourselves to carefully nurturing their growth, we strive to enhance the quality of each bird. By allowing their natural vitality to flourish, we draw out the deepest richness and aroma of the meat, honoring each bird’s life through every dish.

In our course menu, the very first skewer of thigh meat is presented directly by hand to ensure you savor every drop of its rich juices. Smaller cuts that cannot be skewered are offered as dumplings, rare parts are shared, and the stock from the bones is transformed into soups and rice dishes.
