The highlight of the menu is the exclusive Neo Shamo Soba. Born from the desire to let guests fully savor the essence of shamo, this special bowl features not only a refined broth but also generous slices of the rare shamo meat itself. The delicate broth, low in fat yet remarkably pure, is paired with a custom blend of premium soy sauces, including nama-age shoyu (freshly pressed soy sauce), tamari shoyu (rich, gluten-free soy sauce), and saishikomi shoyu (double-brewed soy sauce). The ratio and heat treatment are meticulously adjusted according to the season and the broth’s condition, achieving a balance of aroma and depth that elevates the flavor to perfection.
