Chef Motoki Kondo refined his craft through five years of training at the Michelin-starred Kyoto Cuisine Kinobu, then further mastered Edomae techniques at the Michelin-starred Sushi Yuu in Roppongi.
Blending the seasonal sensibilities of Kyoto cuisine with the precise artistry of Edomae sushi, this gifted young chef prepares each piece with heartfelt dedication to his guests’ enjoyment. At the heart of the sushi is the shari—made with Satoyama no Tsubu, a premium rice from Fukushima prized for its large grains, refreshing sweetness, and elegant umami. The seafood, sourced directly from Toyosu Market and fishing ports across Japan—from Hokkaido to Fukuoka—is always fresh and seasonal. Each ingredient is meticulously prepared with time and care to bring out its fullest flavor.
The restaurant’s intimate setting, just a short walk from Azabu-Juban Station, evokes the warmth of natural Japanese aesthetics. A single-slab counter crafted from Kiso cypress adds serene elegance, while dynamic presentations such as straw-grilling provide a captivating live performance.
