
About L’appétit
L'appétit, located in Nihonbashi, is the sister restaurant of the Michelin one-star French restaurant La Paix. With the theme of “more casual and homey,” it presents a new style of bistro—an innovative “Shin Bistro”—where guests can enjoy the lively atmosphere of counter dining while savoring the techniques and playful spirit of French cuisine.
The restaurant is helmed by Chef Shotaro Hirose, who carries forward the spirit of Owner Ippei Matsumoto. Matsumoto refined his skills at Roppongi’s Vincent and the renowned Belgian restaurant L’Essentiel. Hirose, meanwhile, trained in Paris and served as sous chef at La Paix for four years before becoming head chef.
The dishes offered are “Shin-Traditional” creations—modern interpretations of tradition that combine classical French techniques with the nostalgic essence of yōshoku, Japan’s unique style of Western-inspired cuisine. The Japanese bistro-inspired “L'appétit Course” is an omakase-style plan that allows guests to enjoy the cuisine of sister restaurant La Paix in a more casual setting. While preserving the framework of traditional French gastronomy, the menu incorporates elements of yōshoku and touches of Japanese sensibility, delighting guests with seasonal dishes that reveal something new on every visit.
The interior is refined yet relaxed, with the warmth of wood throughout. The counter seating offers guests a front-row view of the chefs at work, creating an immersive and dynamic dining experience.
We also offer a wide selection of fine wines carefully selected to complement the cuisine, with over 13 types of wine by the glass selected from around the world and around 50 types of bottled wine from famous French winemakers. Wine pairings by a senior sommelier are also available.
