The essence of Chef Kakinuma’s sushi is ittai-kan—a sense of unity, a perfect harmony achieved the instant the rice (shari) and topping (neta) unite in the mouth. Every step of his process is meticulously calculated to create this single, brilliant moment. The shari, an original blend of aged and new rice with red and rice vinegars, is kept precisely at body temperature. As it enters your mouth, it gently dissolves, unfolding the full umami of the topping in seamless harmony.
His meticulous craftsmanship, which has captivated the world, is rooted in the spirit inherited from his mentor, Masahiro Yoshitake of the famed Sushi Yoshitake. At Toyosu Market, Chef Kakinuma personally selects the finest seasonal ingredients. Through precise and patient techniques such as curing and aging, he draws out the utmost potential of each ingredient.
