“Nishidelia,” selected as an official restaurant for Expo 2025 Osaka, Kansai, Japan, is a celebrated destination where Owner‑Chef Nishide presents his signature “Naniwa Italian”—a cuisine born from classical Italian technique fused with the rich character of Osaka’s local ingredients. His craft has been shaped through years of training overseas and at top luxury hotels.

With a commitment to sustainable gastronomy and the advancement of Osaka agriculture, the restaurant is the first in the prefecture to establish direct contracts with farmers, cultivating Osaka vegetables from seed. Ingredients are chosen for the stories they carry, such as Noto Beef from Ishikawa’s Noto Farm—sourced in support of regional recovery efforts. Remarkably, Nishidelia is the only restaurant in Osaka where guests can enjoy this “10‑time Grand Champion” beef, as well as exquisite aged ham crafted by Ryoko Kobayashi, Japan’s only female master charcutier.

The menu showcases both technical mastery and playful creativity: fully handmade tagliolini crafted from flour, artistic desserts by a former painter‑turned‑pastry chef, and the takoyaki‑inspired “Zeppole,” a whimsical nod to Osaka’s food culture.

In this intimate hideaway, guests can savor these dishes alongside expertly selected Italian and Osaka wines, as well as sake chosen by our seasoned sommelier. A gastronomic journey shaped by Osaka’s terroir and the passion of its artisans.
