About Sushidokoro Shishi
Sushidokoro Shishi is an authentic Edomae-style sushi restaurant proudly featured in the Michelin Guide. Here, masterful sushi artisans craft each piece with care, using the finest seasonal ingredients—including the elusive bluefin tuna from Fujita Fishries, often referred to as “phantom tuna,” and premium seafood delivered directly from Hokkaido and Niigata.
Our shari (sushi rice) is made with Mizuho no Kagayaki, a distinguished rice grown in Myoko City, Niigata Prefecture. Its large, naturally sweet grains require no added sugar. Seasoned with rice vinegar and Sasagawa Nagare no Shio—a fragrant salt also produced in Niigata—it becomes a well-balanced base that elevates each bite. To maintain harmony across our menu, we select seasonings primarily from Niigata, further refining the flavor of every dish.
Our sake selection features over 30 varieties from the Joetsu region of Niigata, including rare labels and seasonal offerings seldom seen in Tokyo. The drink menu also includes house-made sudachi sours and umeboshi sours, for pairings both casual and distinctive.
The interior blends modern Japanese aesthetics with natural warmth, centered around a hinoki cypress counter made from cross-sections of wood—each ring echoing quiet beauty. From solo visits to celebratory dinners and refined gatherings, our space offers comfort and elegance for any occasion.
