Top 10 Sushi Restaurants That Source Tuna from Yamayuki
Tuna is the most essential ingredient in Edo-style sushi, and Yamayuki is the industry’s top supplier. The OMAKASE editorial team, an official Michelin partner, highlights sushi restaurants where you can enjoy Yamayuki’s premium tuna.
Yamayuki: The Pinnacle of Tuna
In sushi, sourcing is everything, especially when it comes to Edo-style sushi, where tuna is the most important ingredient. In Japan, there are four major wholesale tuna suppliers, and Yamayuki is regarded as the best.
When Shohei Ohtani and the Dodgers visited Japan in the spring of 2025, sushi made with Yamayuki tuna was served at their dining event.
Sushi restaurants that source their tuna from Yamayuki are considered top-tier.
This article highlights fine-dining sushi restaurants, available for reservation through Michelin's official partner Omakase JapanEatinerary, that use Yamayuki tuna.
*Note: The availability of tuna from Yamayuki varies daily, so we cannot guarantee it.

Top 10 Fine Dining Sushi Restaurants in Tokyo That Source Tuna from Yamayuki
1. Sushi Masashi (鮨 将司) / Aoyama

Sushi Masashi, which opened in 2020, has earned a Michelin one-star rating for four consecutive years, from 2022 to 2025. The owner, who has honed his skills at prestigious hotels and served as an executive chef, is joined by a team of staff with similar top-tier hotel experience, offering exceptional hospitality.
While the sushi follows the traditional Edo style, the restaurant also serves creative and playful appetizers. A standout dish is the tuna sukiyaki (Japanese hot pot), along with tamago kake gohan (rice topped with egg), made using the leftover egg from the sukiyaki mixed with vinegared rice. The chef is dedicated to techniques like aging and dehydrating the fish, never skimping on the extra effort that elevates the flavor.
In January 2025, the restaurant moved to a new location featuring 10 counter-seats and a private room for four. A wide selection of sake, champagne, and wine is also available, perfectly complementing the sushi experience.

Jeannie T4.8Posted on :04/25/2025Chef Yamaguchi and his staff prepared a most excellent edomae-style sushi dinner this week. There was much care placed into every delicious morsel. The otoro in egg sauce just melted in my mouth; even now I can savor it in my memory, it was that good. All the fish served was very fresh, just like what I would expect from such an establishment.
On a side note, I was initially apprehensive about dining alone as a single woman; I had heard some Japanese restaurants can be indifferent or even downright rude to foreigners. To my great relief, every staff member was extremely friendly and spoke English, and I felt very well taken care of.
I would definitely return in a future visit! -

Andy5.0Posted on :04/29/2025Our omakase experience at Sushi Ichijo was easily one of the best meals we’ve ever had. The chef was an absolute joy — his skill and care in preparing each piece of fish were as much a part of the evening as the incredible flavors. Highlights included the rich monkfish liver, the beautifully fresh bonito paired with a light onion and ginger sauce, and the delicate hairy crab complemented perfectly by a vinegar and citrus dressing. Every bite reflected an extraordinary level of craftsmanship. Sushi Ichijo is well worth the investment, but be sure to book well in advance — it’s a must.
