Nestled in a quiet residential neighborhood, Aun is a Kyoto‑style kaiseki restaurant devoted to the spirit of ichigo ichie—treasuring each once‑in‑a‑lifetime encounter. Guests are welcomed with thoughtful hospitality in a serene space designed for quietly appreciating each dish. The intimate counter, carefully overseen by the chef, avoids unnecessary ornamentation so diners can focus entirely on the cuisine. The restaurant has also been featured in the Michelin Guide.
Chef Eiji Onoyama trained for many years at Kikunoi, a three‑Michelin‑star restaurant in Kyoto, where he also served as head chef. Having dedicated his career to Kyoto cuisine, he brings his refined technique and deep experience to every plate, guided by the wish that guests may enjoy authentic kaiseki without formality or pretense.
At the heart of the cuisine is dashi made from aged Rishiri kombu (kelp) and freshly shaved bonito flakes. From the opening course to the final takikomi rice (seasoned rice), the menu showcases the power of dashi to draw out the natural flavors of each ingredient. Subtle touches—such as sashimi presented in a dashi‑based aspic style or tuna sushi accented with rich egg‑yolk soy sauce—reflect the chef’s meticulous craftsmanship
Guided by the philosophy that “everything on the plate must be edible,” the restaurant avoids excessive decoration and instead pursues deep, honest flavor. Here, guests can enjoy true Kyoto kaiseki shaped by the quiet strength of dashi, in a calm and welcoming setting.
