About L'EAU
“L’EAU” is a French restaurant whose name reflects its desire to stay close to people—like water. Chef Takamitsu Shimizu first studied graphic design before entering the culinary world, honing his skills at Mikasa Kaikan in Ginza and building a classical foundation at his father’s restaurant, “Restaurant C’est Bien.”
The course consists of around ten dishes. It begins with an amuse‑bouche titled “Water, Leaf, Soil, Stone,” then highlights seasonal ingredients such as nanohana, Spanish mackerel, and firefly squid, crafted with a range of techniques—grilling, steaming, smoking, and more—to create layered, multidimensional flavors. With an eye toward carrying food culture into the future, the team is committed to sustainable practices such as reducing food waste, while thoughtful service ensures a comfortable, well‑paced dining experience.
Inside, a chic, black‑toned dining room softly lit with downlights features table seating with one‑sided sofas for added comfort. The wine selection is extensive, with pairings offered to complement the lingering finish of each dish. Ideal for anniversaries, dates, or business occasions, it quietly elevates an evening shared with someone special.
