About Hachi
Owner Makoto Shimizu is a master chef with over 35 years of culinary experience, including many years as the head chef at the luxury ryokan Teisho Basaratei in Mie Prefecture. In 2024, he fulfilled a long-held ambition by opening his own restaurant, Hachi. Guided by the refined aesthetic sensibility he has cultivated throughout his career, Shimizu personally selects seasonal ingredients sourced from across Japan.
A highlight of the menu is the charcoal grilling, which uses premium binchōtan charcoal from the Ise-Shima region. By applying the flame directly to the ingredients, the aroma is sealed in and the natural flavors are drawn out to their fullest. Another distinctive feature is the use of rare game—such as bear meat—an uncommon ingredient in Japanese cuisine, offering diners a truly unique experience.
The interior is a sophisticated sukiya-style space designed by an architect, featuring just six seats at a stunning single-plank counter. The tranquil atmosphere, imbued with the scent of hinoki cypress, makes it an ideal setting for special occasions, from important business dinners to intimate, refined dates.
