“Kitashinchi Fuka” carries forward the legacy of a gyoza (dumpling) specialty restaurant that has thrived in Osaka for 45 years, evolving it into a new and refined form.
By reimagining gyoza as a culinary format, the restaurant offers a unique course menu built on a deep commitment to both the wrapper and the filling. Every wrapper is hand‑kneaded, with the blend of wheat flour and ukiko (wheat starch) adjusted to match each filling, and kombu broth or dried‑shrimp stock used in place of water. Seasonal gyoza feature luxurious ingredients such as abalone, fresh sea urchin, and Shanghai crab. Among them, the gyoza made with shark fin from Kesennuma stands as the signature dish.
The restaurant features a U‑shaped counter with only eight seats, allowing guests to experience the live cooking process up close. It is an intimate setting ideal for dates, anniversaries, and special occasions.
