Sushi Hayashi （鮓 はやし）

Mr. Yoshio Hayashi, the owner of "Sushi Hayashi," honed his skills in Kyoto and overseas before opening the restaurant in 2019.

With his strong passion for fish, he sources sushi ingredients directly from nearby regions such as Mie, Wakayama, and Awaji, providing local fish that can only be found there.

The sushi style at "Sushi Hayashi" combines Edomae (Tokyo-style) and Kyoto sushi, incorporating unique elements of Kyoto sushi, such as steamed sushi, as seasonal delicacies alongside the Edomae sushi base.

The selection of wines and sake to complement the sushi constantly changes to match the dishes being served.
