The monthly dessert course “Chaso Ryusui” draws inspiration from the landscapes and shifting seasons felt during visits to tea fields. Each creation distills the depth of Japanese tea and the natural allure of fruit into a meticulously crafted, jewel-like course. Seasonal fruits are carefully selected from across Japan, and through the use of fermentation techniques, their delicate inherent flavors are brought forward without relying on sugar. Thoughtfully paired teas—such as sencha, hojicha, and Japanese black tea—further enrich the experience, offering a harmony that unfolds with every dish.
Chef Tanaka refined his craft at renowned establishments including the modern French restaurant Jean-Georges Tokyo in Roppongi and the dessert atelier L’Atelier à Ma Façon in Kaminoge. Drawn to the profound appeal of Japanese tea, he opened VERT in 2022 and has since pursued a culinary vision entirely his own. By carefully considering what should take solid form and what should become liquid, he creates courses that reveal the fullest expression of each ingredient.
The interior features a stylish, minimalist space grounded in monochrome tones and natural wood. Deep green accents—evoking the richness of tea—create a serene, comforting atmosphere where time seems to flow gently. The six-seat counter offers an intimate vantage point from which to observe the chef’s precise movements, making it a truly special place to spend time. Traditional tea utensils displayed throughout—such as chawan bowls, chashaku scoops, and chasen whisks—lend a quiet, dignified elegance, inviting guests into a moment apart from the everyday.
Carrying the meaning of “entrusting oneself to the flow of nature,” Chaso Ryusui expresses the spirit of the producers and the memories held by each land through tea and dessert. We invite you to immerse yourself in this singular experience found only at VERT.
