About Sushidokoro Suzu
In the Akasaka area, crowded with renowned restaurants, "Sushidokoro Suzu" stands out with a distinctive presence.
Owner-chef Yoichiro Fujii is a seasoned artisan who refined his craft over many years at the celebrated Ginza Kyubey.
After first pursuing the path of traditional Japanese cuisine, he transitioned to sushi, and with the refined skills and hospitality cultivated along the way, he opened his own restaurant in Tameike-Sanno in 2005. Each piece of sushi at "Suzu" shines like a jewel, shaped by this rich background and experience.
Passing through the noren curtains, guests remove their shoes and step into the tatami room—a style that evokes the chic culture of Edo Japan.
The interior features only a horigotatsu-style counter (sunken floor seating), managed entirely by the Taisho (master chef) himself. The true delight is that wherever you sit, every piece is crafted directly by his own hands, keeping alive the traditional Edo sushi culture where artisan and guest meet face to face.
Each morning, the chef personally visits the market to select ingredients with his discerning eye. His devotion to salt is extraordinary; by choosing between coarse salt, moshio (seaweed salt), and other varieties to suit each topping, he draws out the delicate umami of the fish to perfection.
To accompany these exquisite creations, the sake-loving Taisho offers a carefully curated selection of distinctive Japanese sake. Enjoy a blissful moment as you indulge in the pairing of world-class sushi and premium sake.
