The name "noura" carries the meaning of “reverse” or “hidden,” and as its name suggests, it offers a humble and approachable contrast to the refined artistry of Hommage. Chef Yoshio Matsumoto, a seasoned talent, honed his skills in some of France’s most celebrated kitchens—including two-starred establishments such as Michel Trama and Jacques Chibois, as well as Auberge du Claux des Cimes (now led by Régis and Jacques Marcon), and the one-starred Jacques Decoret.

In contrast to the creative and expressive cuisine of Hommage, noura focuses on faithfully prepared, heartwarming dishes that evoke a sense of nostalgia and comfort. Guests can enjoy a variety of authentic French bistro fare crafted with precision and care—from classic onion gratin soup and fish quenelles to duck confit and the beloved national favorite, steak frites.
