Amarantos, a French restaurant relocated and reopened in Ginza, Tokyo, represents the culmination of owner-chef Shintaro Miyazaki's illustrious career. Known for his exceptional talent, Mr. Miyazaki honed his skills at renowned establishments both in Japan and abroad, earning Michelin stars consistently along the way. In October 2021, he poured his passion and expertise into establishing this remarkable venture.
The name "Amarantos," derived from the Greek word meaning "immortality," reflects the chef's ambition to create dishes that stand the test of time. The restaurant offers an intimate and serene setting, featuring ten counter seats and two private rooms. Guests can witness the excitement of live cooking as each dish is prepared in front of them by the chef, elevating the dining experience to a new level.
Each dish showcases an abundance of seasonal ingredients, thoughtfully prepared to highlight their natural allure. A standout specialty is the turnip consommé, which captivates with its delicate blend of sweetness and umami flavor, complemented by frites and presented in a custom-crafted bowl for a truly visual and culinary delight.
Desserts are another highlight, crafted by Mr. Miyazaki, a former pastry chef, alongside Chef Yukari Miyajima. Among them, the signature Chiffon salet, a savory chiffon cake invented around 2008 to accompany meals, presents a distinctive and memorable twist to traditional bread service.
The wine list primarily features white wines and Champagne, with the option for guests to bring vintage wines for a fee. The carefully curated pairings with the restaurant's exquisite cuisine ensure an indulgent and harmonious experience.
