Haruka Murooka

At çayca, the worlds of Japanese tea and French pastry—each with its own cultivated sensibilities and techniques—meet in quiet harmony. The name “çayca” is a coined word that links tea (ça) and confection (ca) through the French neutral pronoun y, expressing the subtle dialogue between two distinct culinary cultures.
Rooted in the dessert philosophy of Kaoru Kurihara, a chef pâtissier who has led pastry programs at some of Tokyo’s finest grand maisons, çayca presents a new style of tea ceremony—one that weaves together Japanese tea culture and contemporary assiette desserts.
The experience begins with a tea ceremony performed by a tea master. In the stillness of the moment, a single bowl of tea gently opens the door to the time that follows. Freshly made seasonal plated desserts are then served one by one, each conceived as an interpretation of tea kaiseki. These creations reflect not only flavor, but also seasonality, space, silence, and the emotional nuances that arise in between. Finished before your eyes, the desserts invite you to savor aroma, movement, and atmosphere as part of the experience. The course concludes quietly with matcha and mignardises, bringing the tea gathering to a serene close.
In a space where ingredients, tableware, design, and even silence are in harmony, çayca guides you into a new realm of sensory expression—an encounter between tea ceremony and French dessert, realized in a tranquil, contemplative setting.
It is a one‑of‑a‑kind dessert experience that lingers not only on the palate, but gently in the heart.
